Coconut Sweet Potato Salmon Cakes
Since starting my journey into eating real, good, whole foods – salmon cakes have been a regular guest for dinner. They’re YUMMY, FILLING, EASY, and QUICK to make.
Not to mention gluten-free & dairy-free…
This is how I made them:
1) Mash 3 cans of canned salmon, 1/2 a diced onion, 2 eggs, 1/2 cup of buckwheat flower together in a bowl.
2) Roll them into balls and flatten them onto a parchment paper lined tray
3) Heat in oven at 400 degrees F for 20 – 25 minutes
Plate with some roasted broccoli, cauliflower and a small spinach salad…I am in heaven…
Flash forward to today…I want salmon cakes, but I am bored with the same old cake. Time for an upgrade!

HEAB’s Sweet Potato Salmon Balls…
Inspired by the sweet potato and blending method in her recipe; I made the following changes to my original salmon cake recipe for a better and more evolved salmon cake

Coconut Sweet Potato Salmon Cakes
Ingredients:
- 2 cans of canned salmon – drained
- 1/2 large sweet potato – mashed (about 200 grams)
- 1/2 diced onion
- 3 tbsp. coconut flour
- 1 egg
- a few pinches of sea salt
This recipe is really easy.
Just take all the ingredients and mix them together. Use a blender for a lighter, fluffier consistency or use your hands for a heartier texture. Combine well then take a generous handful’s worth and form into a ball – patty – or whatever shape you like. Repeat 6-8 times. Place the salmon cakes on a parchment paper lined baking tray. Sprinkle your favorite seasonings ontop. For a complete meal – add olive oil covered broccoli and cauliflower to the tray. Bake in the oven at 400 degrees and in 20 minutes – you have dinner.
I really loved this salmon cake recipe. It‘s light, fluffy, slightly sweet with a hint of coconut. What a healthy, warm and filling meal to close out this Monday evening!

Salmon cakes – YUM! Haven’t made in them in quite a while though because the canned salmon we normally buy started to taste really fishy. Need to find another good brand and start making them again. Such a quick and easy healthy meal for sure.
